News24xx.com - Researchers believe people's preferences for tea or coffee have scientific reasons. A study published in the Nature Scientific Journal found that people who genetically tend to like the bitter taste usually choose coffee because of its higher caffeine content.

Humans have been given the ability to detect bitter taste as a natural warning system to protect the body from harmful substances. But participants in the study who were more genetically sensitive to bitter taste tended to prefer coffee over tea and were more likely to drink more.

"You suspect people who are very sensitive to the bitter taste of caffeine will drink less coffee" said Marilyn Cornelis, Assistant Professor of Preventive Medicine at the Northwestern Feinberg School of Medicine, as reported by Asia One, on January 11th 2019. "The results of our study are just the opposite. It shows that coffee connoisseurs gain a sense or ability to detect caffeine because of the positive encouragement learned from caffeine."

Whereas in a study of more than 400,000 men and women in the UK it was found that people who were sensitive to bitter coffee taste and the taste associated with vegetable compounds were more likely to distance themselves from coffee and choose other sweeter types of drinks, such as tea.

Liang-Dar Hwang from the University of Queensland Diamantina Institute, said that the perception of bitter taste is formed not only from genetic factors but also from the environment. "Although humans naturally don't like bitter taste, we can learn to like or enjoy food with a bitter taste after being exposed to environmental factors," he added.
